My last good crop came in the form of green tomatoes! I’ll be honest, I’ve never had green tomatoes and I have never made anything with them so I was a little apprehensive at first. But i thought, what the heck, I can’t let all these tomatoes go to waste! I have no idea how many pounds of these I had, but I can tell you it got old chopping them! And acutally, chopping them was a bit like cutting up and apple, which I thought was really wierd but made for much easier chopping. I used my trusty Ninja Chopper for this job. I love the Ninja because it has two chopping blades which ensures everything will get chopped!
My goal was to use all of the tomatoes that I could so here is what I made.
1. Green Tomato Relish (Hot Dog Relish)
2. Salsa Verde
3. Chopped the rest in 7 ziplock bags to freeze and use throughout the winter.
I know this doesnt’ seem like much but after I got through chopping everythinig and preparing the relish and the salsa verde, I was to tired to make anything else. So i decided to freeze the chopped green tomatoes and use through out the winter when I want to be reminded of summer. I found a list of 25 Green Tomato Recipes and I will likely incorporate some of these recipes for something different.
When you freeze liquid like items such as chopped tomatoes, its easy to get the air out. Just fill the bag, fold the top over and let out all the air, then seal. You can also put the bag over the side of the counter to the fill line to get the air out. Lay the bags flat to freeze and don’t forget to label them!
We have a recipe for Green Tomato Relish that everyone in our family loves to make. It came from my Great Grandma Jessie Briggs and the recipe says it was taken from the St. Peters Church cookbook. So i’m not sure if this was really her recipe or if she just found it in the cookbook and liked it lol.
Here’s how it’s made. I have a 2 pint and 8 pint version of this recipe. The acutal reciepe is for 8 pints but since my pressure cooker isn’t working, I didn’t have any way to can it. I decided to make a smaller batch that I can just keep refrigerated.
Hot Dog Relish
2 Pint Recipe (Easy to keep refrigerated)
1 cup ground cabbage
1 cup ground green tomatoes
3 green peppers
1.5 red peppers
1/8 c salt
1 1/2 c sugar
Pinch celery seed
pinch mustard seed
1 cup cidar vinegar
1/2 c water
8 Pint Recipe (For Canning)
4 cups ground onion
4 cups ground cabbage
4 cups ground green tomatoes
12 green peppers
6 red peppers
1/2 c salt
6 c sugar
1 tbsp celery seed
2 tsp mustard seed
1 1/2 tsp turmeric
4 cups cidar vinegar
2 cups water
Grind vegetables using coarse blade of hand grinder. Add salt, let stand overnight at room temperature (don’t refrigerate). Rinse with warm water and drain. Combine remaining ingredients and pour over vegetable mixture. Heat to boiling, simmer 20 minutes. Seal in hot steralized jars. Makes 8 pints.
I hope I got my measurements right. It was too hard for me to try to calculate 1/4 of 1 tablespoon and I don’t have a small enough measuring spoon so that is why I listed a pinch of some of the ingredients in the 2 pint version.
This relish works great for hot dogs, burgers, chicken salad etc.
I made a promise to my friends mom I would not reveal her top secret salsa recipe. I had to promise or I would not get the recipe! Her salsa is the best I’ve ever had and I had to have that recipe! So I can’t list it out here. I know, bummer huh?
