I need to preface this week’s recipe by letting you know something weird about me. I hate most white foods! Yes, there I said it, I really do. UGH – the thought of anything white on my plate like sour cream, mayo or any other creamy based food makes me gag! So much so that if I’m in a restaurant and order something sans white food item, I can’t just scrape it off. I have to send it back and get a whole new fresh plate!!
I know that sounds weird but it’s true. And because of that hatred for white foods, I have never tried white chicken chili. The word “white” in the name was enough to keep me away all these years. Even though I love chili, I could never bring myself to try the white kind.
That is until recently. I was at a friends house and they had a pot of white chicken chili simmering on the stove. Before I even knew what it was I wanted to try it, it smelled that good. Then I discovered it was WHITE chicken chili.
Damn. Well I was hungry and it smelled so good so I gave it a shot.
All I can tell you is, OMG! This is what I have been missing out on all these years?! I ate three bowls of it and could have had a fourth but I didn’t want to look like a pig! I love this so much I want to eat it every day.
So even if you hate white foods like me, please give this recipe a try. I promise you it is worth it!
White Chicken Chili
From Michelle’s Kitchen
- 2 Cups Cooked Chicken Breast
- 1 lb bag of dry Great Northern Beans (or 48 oz canned Great Northern Beans)
- 1 T olive Oil (only if you are not going to cook this in the crockpot)
- 1 medium onion chopped
- 2-4 cloves of garlic
- 2-4 oz cans of green chilis
- 2 tsp Cumin
- 1 1/2 tsp Oregano
- 1/4 tsp Cayenne Pepper
- 6 cups Chicken Broth
I’m not even going to bother to freeze this because I will probably eat this to quickly but if you do have leftovers, divide and freeze so you have something quick to eat on a busy night. Don’t forget to label it before you freeze it!
